The Feinback Banneton is built for bakers who understand that great crust, open crumb, and structure begin inside the basket. For centuries, bakers have relied on proofing baskets — “bannetons” — to shape their dough, wick away moisture, and create a signature crust.

At Feinback, we’ve reimagined this tradition with the highest standards of craftsmanship, certification, and design. Our basket is handwoven from unbleached Indonesian rattan, the kind that breathes—wicking away surface moisture to give your dough the taut skin it needs for that coveted ear and bloom.

Care

Before First Use

  • Lightly mist the inside of your banneton with water, then dust with flour (rice flour is best for non-stick results).
  • Allow to dry before first proofing.
  • Recommended to wash linen liner before first use to remove dust and debris

Each Use

  1. Prepare: Generously flour the inside of the basket or the linen liner.
  2. Place Dough: Put your shaped dough seam-side up.
  3. Proof: Let the dough rise, covered with a cloth.
  4. Turn Out: Gently invert onto your baking surface or Dutch oven.

Cleaning & Maintenance

  • After each use, tap out excess flour.
  • Brush clean with a stiff bristle brush.
  • Allow the basket to air dry fully before storing to prevent mold.
  • If dough sticks, let it dry, then brush off — avoid scrubbing with water.
  • Never soak the rattan in water or put in the dishwasher.
  • Wash linen liner as needed with mild, unscented, laundry detergent in cool water. Tumble dry with low temperature heat setting.

Do’s & Don’ts

Do season your banneton with flour regularly for a natural non-stick layer.

Do store in a dry, well-ventilated place.

Do enjoy the natural spiral pattern or use the linen liner for smooth loaves.

Don’t wash with soap or soak in water.

Don’t store damp — moisture can lead to mold.

Don’t worry if the basket darkens over time — this is normal and part of the seasoning process.
